Pork and Mushroom Risotto with Fresh Thyme and Parmesan

Imagine a hearty ground pork ragu mixed in with risotto rice and red wine… First, we cook the ground pork with onions, garlic, fresh thyme, chicken broth, a touch of tomato paste and then add the rice and the mushrooms. The mushrooms are porcini, shitake and cremini. We finish the risotto with parmesan cheese and butter. Yum!
