This is a vegan Indian curry that is loaded with flavor! Red lentils cooked with freshly toasted spices, vegetable broth, coconut milk, a touch of almond butter and crushed tomato. Fresh from the garden kale and rainbow chard are added right at the end. This is served in the pan alongside basmati rice that we add toasted cashews, shredded coconut and spices to. Ready to re-heat and enjoy! If you wish to add a protein to this meal, chicken or fish would be a nice option!
