A hearty fall soup for the cooler evenings ahead. Imagine a traditional creamy tomato soup with the addition of quinoa, chickpeas, onions, celery, and carrots with Italian seasonings. Finished with wilted baby spinach and freshly grated parmesan. If you need this soup to be vegan I can make a separate batch without the cream and cheese in it for you.
