Greek Chicken Skewers + Crispy Mediterranean Potato Wedges
This chicken dish is called Chicken Souvlaki which is chicken breast that is cut into small pieces and marinated overnight in olive oil, lemon juice, white wine vinegar and Greek seasoning. It is threaded on a skewer and cooked. The chicken skewers are served in the pan with crispy roasted Red Norland and Purple potatoes that are tossed in fresh dill and lemon zest after cooking, both of which were grown locally at Middlebrook Farm. You get a side of homemade cucumber tzatziki for dipping sauce with this meal! Super fresh and flavorful!
